Who Are Bilsdale Dexters?

Bilsdale Dexters are a herd of pedigree Dexter Cows located in the North York’s Moors National Park,¬†bred by Jonathan and Olwen Sharp. The herd was started in 2003 originally for conservation grazing but very quickly grew into a commercial beef herd due to the quality and superb taste of the beef, as actively promoted by top TV chef’s and Restaurants alike.

The cattle are grass fed for both health benefits to us and the cattle to ensure quality feed. All the haylage and silage are made by ourselves using our own equipment to ensure quality feed is produced.

We also breed sheep, including the Ryeland – a very old, rare breed – once again to our high grass-fed diets, producing a superb succulent lamb which is available seasonally (around Easter time).

Why Dexter Beef?

Dexter Cattle are the smallest native breed. In the case of grass-fed cattle , less is definitely more. We take great time and care with the rearing of our cattle and also with the slaughtering. Our carcases hang for 3 weeks to allow for perfect maturing. This results in a richer, darker, well-marbled beef, which is then vacuum packed for extra freshness

Why Grass Fed?

We supply premier Dexter beef. This is because all our cattle are grass fed. Our beef has up to six times more Omega 3 than grain-fed cattle. Omega 3 are called “good fats” because they play a vital role in every cell in our body. These “good fats” are important to the healthy function of the brain and linked to lowering blood pressure, fighting depression and reducing cancer.
